In Italy, biscotti (which generally means "twice cooked or baked") refers to any type of cookie. In North America however, biscotti is used to describe a long, dry, hard cookie with a curved top and flat bottom designed for dunking into wine or coffee.  Traditionally biscotti were almond flavored, but now are made with many different ingredients:  dried fruits, nuts, chocolate, seeds, spices, etc.  Additionally, they can be topped with icing, frostings, and covered with a favorite topping.
